Sumatra Specialty Green Arabica

Origin: North Sumatra (Saribudolok)

Altitude: 1350–1400 MASL

Specialty Grade. Moisture: 10–12%

Defect: max 0.4%.

Processing: Full Wash, Honey, Natural, Wine, Anaerobic

Profile: Medium-full body, balanced acidity, fruity, sweet, earthy, smooth aftertaste.

Varieties: Komasti & Andung Sari.

Cocoa Powder

Our selection of cocoa consists of varieties ranging from lightly natural to highly alkalized and deep black, as well as from low-fat to standard fat.

Alkalized

Smooth and dark. Fat 10–12%, pH 6.8–7.2, Moisture ≤5%. Perfect for bakery and beverages.

Low fat variance:

Fat 8–10%, pH 5–6, Moisture ≤5%, ash content 8% Max

Natural Cocoa

Light and slightly acidic. Fat 10–12%, pH 5.4–6.7, Moisture ≤5%. Authentic raw flavor profile.

Low fat variance:

Fat 8–10%, pH 5–6, Moisture ≤5%, ash content 8% Max

Intense color. Fat 8–10%, pH 7.0–8.5, Moisture ≤5%. For deep, strong chocolate applications.
